We are spending the week at the beach and loving every single minute! The ocean just breathes life into my soul and has a way of renewing my spirit. I’m sure many of you can relate. 🌊🥰⁣⁣

We have also been so fortunate to watch the moon rise each night over the beach. The last two nights have been epic! The moon appears over the horizon and it’s huge!... with a bright orange glow and and I’m just in awe of God’s amazing creation! He led me to this very spot and He knew that I would appreciate all of this beauty. The sunsets have been breathtaking as well. I’m just so grateful to be here sharing these moments with my little family. I am sending lots of love and sunshine your way ☀️💓😘😘 ⁣⁣

The little balls have been so satisfying and convenient! They keep me full and are so fresh and tasty! ⁣⁣

In a food processor or chopper add: ⁣⁣

1 cup of gluten free old fashioned oats ⁣⁣
1 cup of almond butter ⁣⁣
1/2 cup shredded coconut ⁣⁣
1 tbsp of chia seeds ⁣⁣
2 tsp of coconut oil (room temp)⁣⁣
1/2 cup of coconut sugar ⁣⁣
⁣⁣
⁣⁣
Blend well.. roll into balls and ENJOY! 🌱😋 ⁣⁣

Store leftovers in the fridge for freshness. ⁣⁣

Recipe:
Ingredients:
3 cloves minced garlic
1-2 tsp grated ginger
3 scallions, thinly sliced
3 cups lacinato/dino kale, stems removed, finely chopped
5-6 shiitake mushrooms, stems removed, finely chopped
3 cups cooked and cooled rice (best is day-old rice from the fridge)
1 tbsp hoisin sauce
1 tbsp soy sauce
1 tbsp sesame oil
.
Instructions:
Heat 1 tbsp oil in a non-stick pan until shimmering, then add garlic, ginger, and scallion and sauté until fragrant. Add chopped kale and mushrooms and cook for 3-4 minutes until kale is crispy. Add another 1 tbsp of oil and then the rice, breaking up clumps and stir-frying until golden, about 2 minutes. Add the hoisin sauce, soy sauce, and sesame oil, and mix until combined, then taste and season with additional salt and pepper as desired. Transfer to bowls and enjoy.

  • croquetas de boniato (15 uds.)

-2 boniatos 
-3 zanahorias
-2 dientes de ajo
-queso (opcional)
-harina
-pan rallado
-huevo (o si sois veganos, harina de garbanzo disuelta en agua)

Pelamos y cortamos a trozos el boniato y lo asamos (podéis hacerlo en el horno o al vapor). Picamos muy bien el ajo y lo sofreímos en una sartén. Cuando esté doradito añadimos la zanahoria rallada y lo dejamos cocinar.
Batimos el boniato y lo mezclamos con la zanahoria y el ajo. Añadimos sal, pimienta y si queréis queso rallado.
Dejamos reposar la masa en la nevera tapada con un film hasta el día siguiente. Rebozamos las croquetas en harina, huevo (o la opción vegana) y pan rallado. Por último las freímos 🥳

  • Stir Fry Noodles w/ Tofu & Broccoli by @janetsmunchmeals 😋 These noodles are packed with so much flavour! You can also add in other veggies if you'd like. Tag someone who loves noodles! Get the recipe:

Ingredients
2 cups cooked udon noodles (avoid overcooking)
1/2 tbsp sesame oil
2/3 block organic extra firm tofu, pressed to remove excess moisture and crumbled
1 tbsp dark soy sauce
2 cloves garlic grated
1 cup broccoli florets cut small (steamed until just crisp-tender)

Sauce (whisk together in bowl):
1 tbsp mirin
1 tbsp agave or maple syrup
Juice half lime
3 to 4 tsp sambal (spicy)
1 tbsp sesame oil
2 tbsp tamari
1/2 tbsp dark soy sauce
1/4 tsp ginger powder
1/4 tsp garlic power (i love garlic)

Extra sambal to serve

In a large pan over medium heat, add 1/2 tbsp of the sesame oil. Add crumbled tofu. Cook, stirring occasionally, for 8 min. Add the 1 tbsp dark soy sauce and grated garlic, cook another 3 min, stir often. Add cooked noodles, sauce, cook another 2 min. Add brocc, cook 1 min. Serve with extra sambal if you like spice.

  • One of my summer favorites - no bake chia cake 😊🍰
This small (I prepare it in 15cm diameter tin) cake is nothing else than a fancy way of serving your chia pudding with granola 😉 Granola turns into nutty crust and chia pudding forms a solid layer thanks to the addition of agar agar (vegan substitute for gelatine) 🎂
We usually devour it in one sitting as it's healthy, light and not overly sweet. Perfect for a lazy breakfast! 😋🍰 I'll leave you the recipe in case you want to try it!

No-bake chia yoghurt cake
For the crust:
1/2 cup rolled oats
1/2 cup almonds
1/2 cup pecans
1/4 tsp of sea salt
2 medjool dates
1 tbsp liquid coconut oil
1 tbsp cold water, if needed
In a food processor, blitz oats, almonds and pecans until broken into very small pieces. Add salt and medjool dates and continue processing. Slowly pour coconut oil and see if the dough becomes sticky. If not, pour a tablespoon of cold water, while blending continuously. Press the dough into a spring form (~15cm) and refrigerate.
Chia yoghurt layer
3 tbsp chia seeds
3 tbsp maple syrup
1/2 cup + 1/2 cup oat milk
1 tsp agar agar 
1 cup (150g) of plain coconut yoghurt
1 tsp vanilla extract
In a bowl, mix chia seeds with 1/2 cup of oat milk and maple syrup and let soak for 15 minutes. In a small pan, bring the second 1/2 cup of oat milk to a simmer, add agar agar and cook for 1 minute, stirring constantly. Remove from heat and let cool a little bit. Add yoghurt and vanilla to the bowl with chia seeds, mix to combine. Now add agar agar mixture to the same bowl and mix well. Transfer the filling to the cake tin, on top of the chilled crust. Refrigerate for 3-4 hours or overnight. Top with berries and enjoy! Store leftovers in the fridge.
