  • happy friday! me and blake are headed to huntington beach for his brother’s birthday:)) honestly looking forward to it cause I’ve heard jet skis are gonna be part of our celebrations 👀 just wanted to drop this recipe on here before not being on my phone for a few hours!

no bake coconut, hazelnut, & dark chocolate bars (V, GF)
for the coconut layer: 
• 1/2 cup coconut butter
• 1/4 tsp vanilla extract
mix together and pour into a mini loaf. freeze & do the following layer
hazelnut layer: 
• 1/2 cup hazelnut flour (sub almond)
• 2-3 tbsp coconut oil
• 2-3 tbsp agave syrup (sub maple, honey)
mix all ingredients together and pour on top of the coconut layer.
dark chocolate layer:
• 1/2 cup melted refined coconut oil
• 1/2 cup cacao powder
• 3 tbsp agave (sub maple, honey)
mix all ingredients together making sure there are no clumps. pour on top of the other layers. freeze for at least 15-20 minutes, then take it out and slice. 🍫

Thanks to Gazz for dinner tonight, we’re getting a bit low on supplies but he used the last of our peppers and some onion and peas in these today - usually we’d have some no chick strips or something but this was super tasty all the same! 👌🏻🌱

  • ~ Quick, easy, healthy ~🇧🇬 spaghetti & meatballs🍝 veganized!

This dinner literally takes me 10 minutes to make and only requires 3 ingredients!!! 

1. PASTA (I used Banza chickpea pasta) 

2. the sauuceee (I used Newman’s Own Tomato & Basil *pls don’t tell my Italian relatives I used premade sauce they will disown me*)

3. Gardein classic meatless meatballs 

That’s literally it, I just warm up the sauce in a pot and add the meatballs to it! Boil the pasta for 9-11 minutes, and serve yourself a beautiful plate of food 🍝

  • A little lunchtime SARNIE for you 💚🤑Hummus, avocado + cucumber - aka all the best things 👀 First of all, shall we just appreciate how PRETTY this is. I mean if that doesn’t persuade someone to eat their greens, then I don’t know WHAT will. This travels really well as well, so great to take with with you to work 💼 

TOP TIP 🌟 if you put the cucumber in between the avo & spinach it won’t make the bread go all soggy and gross. Here’s the recipe: (give it a save!!)

Ingredients
🌱 4 tbsp of hummus
🌱 2 slices of seeded wholemeal bread
🌱 6 slices of cucumber
🌱 ½ an avocado, sliced
🌱 a handful of @good4unutrition Super Sprouts
🌱 a handful of spinach
🌱 black pepper

Method
1️⃣ Spread the hummus over both slices of bread.

2️⃣ Stack the cucumber, avocado, @good4unutrition Super Sprouts and spinach over one slice of the bread, then finish with a crack of black pepper.

3️⃣ Top the sandwich with the remaining slice, slice into two and ENJOY 💚💚💚

  • happy friyay🌻💕🤩✨ today is my last day at the beach, so I’m spending it the right way by laying on the beach all day (not that I can do anything else anyways:)) my pre beach breckie this morning was this classic chia pudding topped with banana slices + almond butta and cinnamon ofc🤤 question of the day...what’s your favorite nut butter? there’s so many to choose from like peanut, almond, cashew, sunflower, pecan, the list goes on! If I could only pick one though I think I’d have to pick almond butter:)) I’ve been an almond butter girl since day one despite my love for peanut and cashew butter haha anywaysss, I hope you guys have a fabulous start to the weekend🥰✨

👉🏻Recipe for vanilla protein porridge:
👉🏻 50g oats, 15g chia and flexseeds 👉🏻 bring  with 300-350ml water to a boil 👉🏻 reduce heat, add 25g vanilla protein powder [ or use 75g oats and fresh vanilla], pinch of salt, vanilla bean paste and sweetener of choice 👉🏻 optional: add 1 tsp of psyllium husk or locust bean gum 👉🏻 let it sit for 5-10 minutes 👉🏻 add more water until desired consistency 👉🏻 add toppings!

  • CREAMY BROCCOLI RISOTTO🥦🍚
I was inspired by the @fullgreen.official cauliflower n broccoli rice to attempt a broccoli risotto n this tasted delicious! 

Ingredients: (for 1)
- 2 garlic cloves, minced 
- 1 white onion, diced 
- about 1/3 to 1/2 of risotto or short grain Rice (or 1 pack of @fullgreen.official cauliflower and broccoli rice) 
- 130ml Vegan cream, I used Elmlea double cream 
- A few broccoli florets, processed in the food processor
- 1 cup of vegetable stock
- 1 tbsp nutritional yeast
- Parsley, to garnish 

Method: 
- Cook garlic and onion in some olive oil until the onion is translucent 
- Stir in the rice. If the rice is raw, toast for about a minute 
- Stir in the broth, vegan cream and processed broccoli florets 
- Stir in the nutritional yeast and cover the pan, leaving the risotto to cook on medium heat for about 20 minutes
- After 20 minutes, uncover and allow the risotto to cook for 3-4 minutes. This makes sure any excess liquid evaporates 
- Season to taste

  • Breakfast this morning🍓🍫🍪 I haven’t had oatmeal in forever! (At least it feels like it ahaha) the last time I had some was when I filmed my what I eat in a day video😂 I tried this oat Turkish yogurt today for the first time and it was suuuuper thick!!
