  • 🍟 Papitas de calabacitas 🍟
Te prometo que saben deliciosas y para mi es un buen reemplazo de la papa 🥔 😉

✨Ingredientes:
Calabacitas
Tajin habanero @tajinmexico 
Lemon pepper
Aceite de oliva

👩🏻‍🍳 Precalienta tu horno a 150C 
Corta las calabacitas en palitos gruesos (se encogerán un poco al cocinarlas). En una charola con aluminio, rocía un poco de aceite de oliva para evitar que se peguen.
Sazona las calabacitas con lemon pepper y tajin habanero y colócalas en la charola. 
Hornea las calabacitas por 10 min, supervísalas para cuidar que no se quemen. Te recomiendo que les des vuelta a la mitad.

  • Lamb kofta with spiced kale and salad leaves

I make my kofta with lamb mince, fresh chopped marjoram, tumeric, black pepper, nutmeg, cumin, ground corriander, cinnamon, a pinch of chilli and egg. mix it really will to bind the spices and lamb together, this also helps it stay in shape while cooking.

I cooked my kale in a little olive oil then added 1/4 tin chopped tomatoes and some pickled jalapeno peppers.

4 types of salad leaves, pine nuts and pumpkin seed oil.

  • There it was August 8 already, and except for 2-3 freakishly beautiful days in early July where the tepmerature high was around 85, I hadn't gone for a walk oustide in weeks.⁠⠀

What I'd done  instead was to move just about every piece of furniture in my house so I could run from front door to living room, down the halls,  into my bedroom, and out again into the family room. Over. And. Over. And. Over. Again.⁠⠀
⁠⠀
And, people, I don't have a big house.😓⁠⠀
⁠⠀
On Saturday, I realized that between the Phoenix temperatures that are running around 111*😡, and all the pandemic issues, I was just plain afraid to go outside. I also realized that a part of my brain, namely my tricksy little amygdala, is a bit on high alert because of all that's been happening here since March. ⁠⠀
⁠⠀
(You all know what the amygdala is, right? It's where your fight, flight, or freeze center is.)⁠⠀
⁠⠀
So, on Saturday, I shushed my amygdala,  and told her we're going on a walk. She survived! In fact, she felt rather silly for refusing to get outside more in the last 30 days.⁠😚⁠⠀
⁠⠀
And, I remembered something: if you get outside by 7 a.m., there is still plenty of sweet, sweet shade covering my favorite foot path.⁠⠀
⁠⠀
Also, ALL of me needs sunshine, fresh air, and rigorous movement  at the same time.⁠⠀
⁠⠀
I don't know about any of you, but fear can make me irrational.⁠⠀
⁠⠀
It  also messes with my whole body causing anxiety induced hot flashes, headaches, insomnia, and shoulder pain.⁠⠀
⁠⠀
Weird, huh? But true. ⁠⠀
⁠⠀
Beloved, I am so curious to know how you come to recognize  fear that is NOT based in reality and how you succeed in taking better care of yourselves.⁠⠀

⚪50 gramos de chocolate 100% @chocolatessole troceado ⚪1/2 taza de nueces @els_noguers troceadas ⚪1/2 taza de nueces pecanas troceadas ⚪4 cucharadas soperas de semillas de cáñamo @iswariofficial ⚪2 cucharadas soperas de semillas de chía ⚪1/4 de taza de eritritol @naturseed molido ⚪1cucharada sopera de café 100% arábica @alternativa3scoop seco ( cuando hago café ,luego dejo los posos secar al sol y los uso. Tiene que ser un café de calidad ) ⚪2 cucharadas soperas de Nibs de cacao @mybodygenius ⚪1 taza y 1/2 de chips de coco @naturseed ⚪8 pastillas de manteca de cacao @iswariofficial derretidas ⚪pizca de sal 

Mezclamos chips de coco , nueces ,nueces pecanas , cáñamo, chía ,nibs de cacao,pizca de sal ,eritritol y café. Añadimos la manteca de cacao derretida y tostamos a fuego lento en sartén. Finalmente, añadimos el chocolate y dejamos enfriar antes de guardar en el bote.

Os prometo que está riquísima.

PD: @alternativa3scoop también tiene café liofilizado . Muy buena alternativa a los cafés solubles que de café tienen poco . También sería ideal para esta granola

  • Have you guys heard of Malanga Blanca?  It's also called yautia, cocoyam, eddo, ocumo or japanese potato. I had actually never heard of it but I just stumbled across it at Publix the other day. I thought it was maybe cassava or yucca at first. If you're looking for a good starchy veggie other than sweet potatoes on the AIP diet, this is a great option! It is very similar in taste and texture to a white potato. I just peeled, boiled, and diced them, then added them to a skillet and they were delicious. I'm exploring more interesting ways to cook them now. I'm thinking maybe a shepherd's pie or garlic mashed potatoes!

Weil ihr euch in meiner Story das Rezept gewünscht habt 😊. Es schmeckt einfach herrlich und man kann das Gemüse beliebig variieren. Hier das Rezept für euch zum Abspeichern, so wie ich es selber am liebsten mag, und ein bisschen Inspo, welches Gemüse ihr sonst noch verwenden könnt ☺️.

🍆 ZUTATEN FÜR 1 BACKBLECH 🍆 
Gemüse:
* 1 Aubergine
* 2 rote Paprika
* 2 rote Zwiebeln
* 250 g Champignons
➡️ Ebenfalls geeignet: Zucchini, grüner Spargel, Rosenkohl, Karotten, Brokkoli, Blumenkohl, Kürbis, Cherrytomaten.

Marinade:
* 5 EL Olivenöl (auch lecker: 3 EL Olivenöl + 2 EL Chili-Öl)
* 1 TL Salz
* Etwas Pfeffer
* 1 EL Italienische Kräuter
* Optional: Etwas Knoblauch
.
✨ ZUBEREITUNG ✨
1️⃣ Backofen auf 200°C Ober- & Unterhitze vorheizen.
2️⃣ 250g Champignons mit einem Pinsel oder Tuch säubern und grob zerkleinern.
3️⃣ 1 Aubergine & 2 rote Paprika waschen und grob hacken.
4️⃣ 2 rote Zwiebeln schälen und in Ringe schneiden.
5️⃣ Das ganze Gemüse in eine große Schale geben.
6️⃣ Die Marinade zubereiten und über das Gemüse geben, danach alles sehr gut vermischen.
7️⃣ Ein Backblech mit Backpapier auslegen und das Gemüse darauf verteilen.
8️⃣ Anschließend kommt es für 30-40 Min. in den Ofen. Nach 20 Min. einmal durchrühren.

  • It’s been a hot minute since I’ve posted on here but life has gotten in the way 😬 wedding prep, house hunting #adulting haha but yesterday’s rainy Sunday weather got me in the mood for baking so sea salt chocolate blondies were created 😍🍪🍫 not healthy whatsoever 😂 but healthy for the soul 😝

  • Sunday mornings are for pancakes! My favorite almond flour pancakes. 

Ingredients:
Wet Ingredients ~
2 large eggs
⅓ cup light coconut milk from the can refrigerated 
1 teaspoon vanilla extract
Dry Ingredients ~
1 ¼ cup packed fine blanched almond flour
¼ teaspoon baking soda
Pinch of salt
Butter, olive oil or coconut oil, for greasing the pan
Optional add-ins:
¾ cup blueberries, fresh or frozen

In large bowl, mix together the eggs, light coconut milk, and vanilla together until smooth and well combined. Add in almond flour, baking soda and a pinch of salt; stir with spoon until well combined.

Enjoy! ❤️
