Black chickpea kebabs with tomato salsa is a great recipe for the weekend. This is exactly why I chose it for our Friday night special - Thank God It's Friday!

Made the hummus with soaked and boiled white chickpeas, tahini, olive oil, garlic, yogurt, salt... the salsa by mixing together 🍅 tomatoes with 🌰 onion, garlic 🧄, 🌶 chilli, mint 🌱, 🍋 lemon juice and salt... the naan with a dough made up of flour, yogurt, oil, salt, sugar, baking powder, baking soda... and finally the kebabs by making a paste of boiled black chickpeas; mixing it up with ginger, onion, garlic, cumin, coriander powder, chillies and salt; shaping balls and placing them inside an air-fryer. Thanks @neena3029 for this lovely gadget. Air fried the kebabs for 15 minutes at 200°.

My family gobbled them up as soon as I finished capturing a picture but before I could wipe my hands off the apron. 😊 At the risk of smearing and smudging my @samsungmobile with grease, I usually click with a ladle in one hand and the phone 📱 in the other. Gotta learn how to use the stylus...😅

As much as I was tempted to use a filter (because of the dim lighting), I refrained from doing so 'cause I believe food looks best in its natural  colors.

  • Summer spells 🌽 the arrival of maize, and who doesn't love CORN ON THE COB, yummy cooked ears of freshly picked maize.

Since we had lit a BBQ to grill paneer, and since the remnants of 🔥 coal still blazed, not quite done for the day, I picked up a few ears, peeled the husk back to rub them with melted butter, then re-secured the husk around them with a string, before placing them on the grill. And then I did the second grilling (after shucking the husks off as you can see in the 2nd picture) for that smoky flavor.

Scattered some red chili 🌶 powder, black salt, smeared some tamarind chutney, drizzled some 🍋 lemon juice, and polished off the tender kernels with butter dripping down my chin, and the corn 🌽 sticking between my teeth. 😋

  • Yesterday afternoon, I debated whether to sit curled up in bed 🛌 to watch a cozy mystery on Netflix 📺 or to slave over the stove top. I knew that the parmesan stick wouldn't hold out for long in this August heat and needed to be consumed within a week at the most unless I wanted a fungus-riddled one. It's kind of obvious who won! 

So, here's the dish - Farfalle 🎀 Pasta with Spinach 🍃 and Breadcrumbs. Crumbilicious!

🥣Heat a sauté pan. Add the olive oil. When the oil is hot, add the garlic and 🌶 red pepper flakes. Cook for just about 10 seconds before adding the chopped 🔪 spinach. Season.

Transfer the boiled pasta into the sauté pan, and stir.

🍞 Put a few bread slices into a food processor and pulse to make crumbs. Add oil to a pan (enough to coat the bottom). When the oil is hot, add the crumbs and toast until golden brown and crisp, stirring often. Use a slotted spoon to quickly transfer the breadcrumbs to a paper towel. Season.

Serve the hot pasta in a bowl. Garnish with the fried breadcrumbs and grated parmesan.

For a VEGAN version, skip the cheese though I beg you not to if you are not allergic to it:)

This one's stuffed with homemade dried tomato 🍅 pesto, crunchy lettuce, purple cabbage, sautéed mushrooms, grilled zucchini and of course a slice of 🧀 cheese. Skip the cheese for a vegan one.

  • Rustic, homemade TOMATO 🍅 soup

🍅My family and friends say I make the tastiest tomato soup, rich and creamy despite a drop of cream in it. That's because I choose the juiciest tomatoes that are at their most ripe and what better than August to get your hands on the best ones!

🍅🥕🧅🧄 Chop 1 kg tomatoes into quarters. Take an onion, a couple of cloves of garlic,1 carrot and chop them 🔪 into small pieces. Spoon 2 tbsp olive oil into a large heavy-based pan and tip in the onion, carrot, garlic until they're soft . Shoot in the tomatoes and stew for a while before adding some 💧 water and simmering for some more time. Add salt, sugar and black pepper.

🍅Ladle the soup into your blender, and blitz until it is smooth. Strain and pour the puréed soup into a large bowl. 😋 Yum soup is ready!

🧀 The truth is that cheese is what you call a whole food. Whole foods are generally good for you, as long as you don’t eat too much of one thing.

🧀 So, this was today’s breakfast; open-faced sandwiches (if allergic to gluten, use gluten-free bread as your vehicle for the toppings) with an assortment of 🧀 cheese, avocado 🥑, zucchini 🥒 and tomato 🍅.

🧀 And like I said, snacking occasionally on cheese is definitely a healthy, delicious habit.

  • Served this creamy, garlicky, ‘Hung Curd and Feta Cheese Dip’ with crispy homemade gluten-free lavash, Cremica classic crackers, green olives, extra virgin olive oil and my love.

You can play around with the seasoning - I added minced garlic 🧄 and a bit of Icelandic flake volcano salt to the feta and curd mixture. The black color comes from activated charcoal, resembling the Icelandic black lava. Add more seasonings if you like, a chopped jalapeño 🌶 perhaps. Just make sure the curd is hung for at least 4 hours, you need all that water 💦 to drain out so the dip isn’t a liquid mess.

  • Toffee 🍎 Apple & 🍒 Cherry Brûlée. Glorious, healthy start to the day with these little breakfast bowls stuffed with goodness!

The pictures explain it all. Cinnamon flavoured cubes of 🍎 apples go in first, to be followed by juicy cherries, and then the crunchy Kellogg’s granola. The show stopper is the brûlée’d layer of sugar atop the hung yogurt. Cherrylicious!

Clicking pictures with my old phone (with a hazy lens) since my spanking new one (Samsung galaxy note 10 plus something something) broke day before yesterday.

  • My favourite breakfast on earth is an🥚 egg or eggs cooked to perfection with a cup of black coffee ☕️. A match made in food heaven. Period.

The fried egg 🍳 of my choice has to be sunny side up, cooked uninterrupted for 3 minutes with a tight lid on the pan. Seasoned only with salt - no black pepper.

Mastered the omelette of my choice ‘cause that seemed simpler than changing my home chef’s perception of this dish - he makes a good Indian masala omelette which the rest of the family members absolutely adore. My method involves swirling and cooking 3 eggs in a non stick hot pan (with shimmering oil and foaming butter). Once the eggs have set (takes 3-4 minutes) layer the ingredients into the omelet - grated cheese, 🌿 herbs, mushrooms, 🧅 onions, tomatoes 🍅 before folding it up. Right before serving, top it with a dollop of sour cream for a little tang and acidity, and fresh herbs. It’s the perfect garnish.

Since my new Samsung Galaxy mobile📱broke last evening, the photo capture in this post (from my old phone) is not quite how I imagine it should be:(

Also, can you help me with something? In the comments section, could you share your opinion if eggs are vegetarian or not. I think they are vegetarian - every product that comes out of animals is not non-vegetarian, the best example being milk. And I think eggs fall in that category too since they do not have life. You tell me...

  • A simple yet surprisingly refreshing plate of food, Caprese Salad is a dish that shows the glorious bounty of summer.

Red tomatoes, scoops from bocconcini instead of fresh mozzarella ('cause I had to use it or else it would get spoilt), and basil along with a sweet balsamic reduction. Of course, you gotta drizzle the good old olive oil on top but we skipped it and made do with flaky salt and cracked pepper.

Easy, and delicious.

  • Bhatti Paneer, grilled on coals to perfection can make for an excellent starter.

Marinated with yoghurt, ginger, garlic 🧄 and bhatti spices (black pepper, black salt, cumin, cardamom,  coriander seeds, cinnamo, cloves), served with onion 🧅 rings and mango 🥭 chutney, it can very well be the main course if placed atop a lachha parantha.

Along with the cottage cheese rolls, my face got partially grilled too as I bent over the hot BBQ 🔥. No worries as I was happy to see the cheese logs come out of the salamander blushing orange with pride, giving stiff competition to my rosy cheeks.

  • Bone-tired, and totally happy after a day of hanging out with my masked 😷 family, I put my feet 🦶 up yesterday evening at about 6:30 p.m.

However, seconds later, I had this sudden urge to eat something so very spicy that it should be able to turn me into a flame 🐲🐉shooting dragon. Bye-bye 👋sofa.

The silken tofu called out to me from behind the oranges 🍊 on the fridge shelf. Grabbing it, I separated the edges of the package with a small knife. Covered the packet with a plate, turned it over and then cut small holes on the two diagonal corners. Blew some air in, and the tofu slid out easily.

Chopped loads of red chillies 🌶🌶🌶 (as many as I could find hiding under the green ones), added sugar, salt, vinegar and topped the tofu with this fiery dressing. Next, I steamed the tofu for 5 minutes before adorning it with a few, tired-like-me (normally, I make sure my ingredients dazzle but at this hour I couldn't possibly have gone for vegetable shopping) coriander 🌿 sprigs, and drizzling it with light soy sauce and some homemade chilli-garlic oil.

Captured a single shot 📸 with my trusted Samsung (there wasn't enough light though, and I hate using filters for my food pictures). BTW, initially I did use - like for the Mediterranean Vegetables but I regret doing so and refrain from doing it any more.

Dug in 🥢😋 and boy, I sure was a fire-spitting beast 🔥 💥 with smoke curling out of my ears!

  • Delicious Pasta, Tomatoes and Bocconcini baked into a bowl of comfort food.

Add slightly blanched spinach 🍃 leaves in an ovenproof bowl. Next, add cooked and seasoned gluten free pasta 🍜 of your choice. Pour homemade tomato sauce (or canned) 🥫 over the top and stir gently to combine. Spoon in bocconcini and stir again. Top with a bit of grated parmesan.

Pop into the oven for 15-20 minutes, just long enough to melt the bocconcini 🧀. I think that's just about enough time to enjoy a pre-dinner glass. 🍷 At least that's what I did, it being Saturday.

Garnish with a few spinach leaves and tuck in. 😋

  • Addictively hot and refreshingly crunchy, the fiery Som Tam is my favorite salad in a Thai restaurant.

You've got to absolutely nail the texture of the ingredients to get it right - pound the garlic, peanuts, red chillies for just the right amount of time; shred the raw papaya with a mandolin or a grater making sure that the strands are not limp or very short, bruise the blanched beans briefly or not at all depending on the variety you get hold of, and so on. Online recipes can tell you what goes in the dressing - basically, sugar, salt, lime juice...

This intensely sour, and savory side dish has remarkable cooling properties - much needed in the sticky heat nowadays.

  • Tossed this Avocado 🥑 and Cherry tomato 🍅salad last evening. Actually, let me rephrase it - more like placed (not tossed) the ingredients on a plate. 

🥑🍅A nutrient dense, creamy stone fruit, avocados lower the risk of depression besides numerous other health benefits.

🥑🍅 You can tell how ripe an avocado is by gently pressing into the skin. If the avocado is firm and does not budge, you will need to let it ripen for a few days before consuming. Soft avocados make great guacamole, while firmer avocados are good for slicing and adding to a salad or a sandwich. To speed up the ripening process, place an avocado in a paper bag with a banana.

🥑🍅My favorite kind of cooking - just a couple of ingredients and an easy recipe. Am all out for simplicity, fresh ingredients, clean flavours and vibrant colors.

  • 🍔🍟Hearty, juicy, flavorful vegetarian bean patties sandwiched between Mrs Bectors English Oven Buns, and topped with red onions, tomatoes, iceberg lettuce, cheese before being drenched with a homemade dressing is what these pictures are about and about how I spent yesterday morning. 

🍔🍟Yes, I wanted to make this perfect patty for the perfect bun 'cause more often than not, I find vegetarian patties to be either soggy and sad or lacking in flavor or deep fried. Now this one here does total justice to the glorious sesame sprinkled buns.

🍔🍟No burger is complete without chips. Not the usual French Fries here, but potatoes with skins on, sautéed on the same skillet as the patties. The last picture displays the ingredients that go into the patty. Nutritious beans, and oats go in besides onions, garlic, coriander, mixed seeds. 

🍔🍟Skip the cheese to make it vegan. The patties are gluten free and can be sandwiched between gluten free bread.

  • Chocolate cake (gluten-free)

🍫This 'yummier and possibly more decadent than a regular chocolate cake' comes from more than a dozen practice runs 8 years back, when my daughter was newly diagnosed as being allergic to gluten.

🍫Although half the practice cakes went straight into the bin, and almost all the online recipes failed to get me that 'as or more delicious than a flour cake', I remained highly motivated, refusing to quit until I got what I wanted. And boy, did I get it! Mmm 😋.

🍫Yesterday, after chucking the pan with the tried and tested batter, into the oven (the most satisfying moment for a baker), I sat down to do some random 📺 TV surfing. About half an hour into that, I realized that though I had halved the quantity of the ingredients to cook a smaller cake, I had forgotten to reduce the baking time accordingly. Oh, no, no, no. Sure enough, it was over baked, which is a big mistake with any cake, and especially so with glutenfree ones. So, once again, I geared up to bake, which would probably take up the rest of the afternoon. Bye-bye TV. 😅 The last picture (with a cutout slice) is that of the over-baked cake. Strangely, my family devoured that too with relish. All I can say is that chocolate, the food of the gods, has its mysterious ways.

🍫The recipe of this one will go in my cookbook if I write one. Until then, you may place an order with me for this yummy dessert. Apologies for not being able to hand out the recipe.

🌸 As for the edible frangipani flowers, here's how I used them. After rinsing them in cool water, I put them on paper towels to fully air dry prior to decorating the cake with these delicate beauties.

Since I'm a storyteller, this is how I weaved a story around the cooking session moderated by @megha20g for the lovely members of EO.

Armed with a spatula, a wok and kitchen knives, I put on a 👘 kimono (from @pinklayindia) to go with the Korean, Vietnamese food I was gonna rustle up before marching towards the stove.

Little pots perfect for the mise en place (everything that has been weighed, chopped and mixed before you start cooking) stood like valiant weapons ready to be whirled into the cooking storm that was soon to brew in my kitchen.

A satisfying afternoon indeed!

  • Yesterday I made a trio of the good old dip, HUMMUS - blitzed one batch of soaked chickpeas with coriander 🌱, the second with pitaya powder and the third with no additional ingredient other than the regular ones (which of course went into the other 2 batches as well), namely, hung curd, garlic, 🧄 olive oil, sesame seeds, salt and lemon juice 🍋.

Kept the camera lens' focus on the classic version. A dash of paprika, a scattering of black pepper, a few chopped black olives and the dip is good enough to dig in.

  • A BURRITO is a glorious Tex-Mex dish - a pliable flour tortilla 🌯 stuffed with beans, boiled rice, sautéed bell peppers and red onions 🧅, loaded with cheese 🧀, and slathered with guacamole 🥑. Once, I encased these rolled up tortillas in foil,  they went into a medium hot oven to warm up. Delicious!

It's no wonder so many of us are addicted to these delightful cylinders.

Mine turned out with crispy exteriors, and warm, cheesy interiors.

Served with guacamole, oven-baked tomatoes, hung curd and Sriracha sauce, these burritos are now right on the top on our list of family favorites.

  • Marinated Asian beet salad with crumbled feta

As usual, no filters used as I desire to see ingredients shine in their natural colors. 

Cooking during this lockdown is helping me sustain interest in my day-to-day life, and communicate my feelings through food art and food styling.

Lovingly, I rubbed the beetroot with oil before roasting it wrapped up in foil. Next, I sliced it with a mandolin and marinated in sherry vinegar, oil, salt and sugar. A salsa (onion, tomato, any fresh green herb) wreath adorned the neatly arranged beet roundels. On went the lettuce and the crumbled feta for the final, finishing touches. Enjoy!

To make it totally vegan, skip the feta.

  • Wood Fired PIZZA imparts a delightful charred flavor to the crust. The bottom cooks in a jiffy, giving it a smoky taste.

Since the hot oven cooks very quickly, the cheese is melted and bubbling, and the toppings retain their freshness.

Not just fuelling the fire, but fuelling my love for good food too. My personal favorite is one with minimal toppings - just tomatoes, cheese, and basil leaves. That way you can enjoy the pizza's authentic taste minus the soggy frills.

  • Throwback to April when I put together Royal Falooda, a creamy and rich indian street-food dessert drink. It's made with milk 🥛, rose 🌹 syrup, jelly, dry fruits and a couple other ingredients.
 
I’ve been fascinated by this ultra-popular dessert since forever (but somehow never got around to actually make it) & the lockdown got me craving for its slurpy goodness.

😋 Mmmm! I’m sure Royal Falooda is what goes for a welcome drink in heaven. 🧚🏻‍♂️🧚🏻‍♂️ C’mon folks, it’s easy-peasy - rustle it up in your kitchen, & enjoy it on Earth 🌎 itself.

Fold in a bowl: Grated and squeezed courgettes, chopped mint and onions, crumbled feta cheese, salt, flour and gram flour. To make it gluten-free, skip the flour and add more of gram flour.

Put spoonfuls in an oiled, heated pan and cook each side for 5 minutes or until golden. Serve warm with a little fresh vegetable and herb 🌿 salad.

Black chickpea kebabs with tomato salsa is a great recipe for the weekend. This is exactly why I chose it for our Friday night special - Thank God It's Friday!

Made the hummus with soaked and boiled white chickpeas, tahini, olive oil, garlic, yogurt, salt... the salsa by mixing together 🍅 tomatoes with 🌰 onion, garlic 🧄, 🌶 chilli, mint 🌱, 🍋 lemon juice and salt... the naan with a dough made up of flour, yogurt, oil, salt, sugar, baking powder, baking soda... and finally the kebabs by making a paste of boiled black chickpeas; mixing it up with ginger, onion, garlic, cumin, coriander powder, chillies and salt; shaping balls and placing them inside an air-fryer. Thanks @neena3029 for this lovely gadget. Air fried the kebabs for 15 minutes at 200°.

My family gobbled them up as soon as I finished capturing a picture but before I could wipe my hands off the apron. 😊 At the risk of smearing and smudging my @samsungmobile with grease, I usually click with a ladle in one hand and the phone 📱 in the other. Gotta learn how to use the stylus...😅

As much as I was tempted to use a filter (because of the dim lighting), I refrained from doing so 'cause I believe food looks best in its natural  colors.

  • Summer spells 🌽 the arrival of maize, and who doesn't love CORN ON THE COB, yummy cooked ears of freshly picked maize.

Since we had lit a BBQ to grill paneer, and since the remnants of 🔥 coal still blazed, not quite done for the day, I picked up a few ears, peeled the husk back to rub them with melted butter, then re-secured the husk around them with a string, before placing them on the grill. And then I did the second grilling (after shucking the husks off as you can see in the 2nd picture) for that smoky flavor.

Scattered some red chili 🌶 powder, black salt, smeared some tamarind chutney, drizzled some 🍋 lemon juice, and polished off the tender kernels with butter dripping down my chin, and the corn 🌽 sticking between my teeth. 😋

  • Yesterday afternoon, I debated whether to sit curled up in bed 🛌 to watch a cozy mystery on Netflix 📺 or to slave over the stove top. I knew that the parmesan stick wouldn't hold out for long in this August heat and needed to be consumed within a week at the most unless I wanted a fungus-riddled one. It's kind of obvious who won! 

So, here's the dish - Farfalle 🎀 Pasta with Spinach 🍃 and Breadcrumbs. Crumbilicious!

🥣Heat a sauté pan. Add the olive oil. When the oil is hot, add the garlic and 🌶 red pepper flakes. Cook for just about 10 seconds before adding the chopped 🔪 spinach. Season.

Transfer the boiled pasta into the sauté pan, and stir.

🍞 Put a few bread slices into a food processor and pulse to make crumbs. Add oil to a pan (enough to coat the bottom). When the oil is hot, add the crumbs and toast until golden brown and crisp, stirring often. Use a slotted spoon to quickly transfer the breadcrumbs to a paper towel. Season.

Serve the hot pasta in a bowl. Garnish with the fried breadcrumbs and grated parmesan.

Now, #CaptureAndEat

For a VEGAN version, skip the cheese though I beg you not to if you are not allergic to it:)

Since I'm a storyteller, this is how I weaved a story around the cooking session moderated by @megha20g for the lovely members of EO.

Armed with a spatula, a wok and kitchen knives, I put on a 👘 kimono (from @pinklayindia) to go with the Korean, Vietnamese food I was gonna rustle up before marching towards the stove.

Little pots perfect for the mise en place (everything that has been weighed, chopped and mixed before you start cooking) stood like valiant weapons ready to be whirled into the cooking storm that was soon to brew in my kitchen.

A satisfying afternoon indeed!

  • Chocolate cake (gluten-free)

🍫This 'yummier and possibly more decadent than a regular chocolate cake' comes from more than a dozen practice runs 8 years back, when my daughter was newly diagnosed as being allergic to gluten.

🍫Although half the practice cakes went straight into the bin, and almost all the online recipes failed to get me that 'as or more delicious than a flour cake', I remained highly motivated, refusing to quit until I got what I wanted. And boy, did I get it! Mmm 😋.

🍫Yesterday, after chucking the pan with the tried and tested batter, into the oven (the most satisfying moment for a baker), I sat down to do some random 📺 TV surfing. About half an hour into that, I realized that though I had halved the quantity of the ingredients to cook a smaller cake, I had forgotten to reduce the baking time accordingly. Oh, no, no, no. Sure enough, it was over baked, which is a big mistake with any cake, and especially so with glutenfree ones. So, once again, I geared up to bake, which would probably take up the rest of the afternoon. Bye-bye TV. 😅 The last picture (with a cutout slice) is that of the over-baked cake. Strangely, my family devoured that too with relish. All I can say is that chocolate, the food of the gods, has its mysterious ways.

🍫The recipe of this one will go in my cookbook if I write one. Until then, you may place an order with me for this yummy dessert. Apologies for not being able to hand out the recipe.

🌸 As for the edible frangipani flowers, here's how I used them. After rinsing them in cool water, I put them on paper towels to fully air dry prior to decorating the cake with these delicate beauties.

This one's stuffed with homemade dried tomato 🍅 pesto, crunchy lettuce, purple cabbage, sautéed mushrooms, grilled zucchini and of course a slice of 🧀 cheese. Skip the cheese for a vegan one.

C'mon, make your version and tag me.

BTW, the 3rd picture shows how I lovingly tailored a charming brown dress for the 🥪 sandwich.

Combine onions, tomatoes, garlic and zucchinis with fragrant fresh herbs and olive oil. Top up with thinly sliced potatoes and bathe this pot of goodness with olive oil before popping it into a 180°C oven for an hour to transform it into a pot of gold.

Meltingly tender and golden chips.

  • 🍔🍟Hearty, juicy, flavorful vegetarian bean patties sandwiched between Mrs Bectors English Oven Buns, and topped with red onions, tomatoes, iceberg lettuce, cheese before being drenched with a homemade dressing is what these pictures are about and about how I spent yesterday morning. 

🍔🍟Yes, I wanted to make this perfect patty for the perfect bun 'cause more often than not, I find vegetarian patties to be either soggy and sad or lacking in flavor or deep fried. Now this one here does total justice to the glorious sesame sprinkled buns.

🍔🍟No burger is complete without chips. Not the usual French Fries here, but potatoes with skins on, sautéed on the same skillet as the patties. The last picture displays the ingredients that go into the patty. Nutritious beans, and oats go in besides onions, garlic, coriander, mixed seeds. 

🍔🍟Skip the cheese to make it vegan. The patties are gluten free and can be sandwiched between gluten free bread.

🍔🍟Dig in.
