One of my favorite places to get ramen is Hiro Nori Ramen. Their spicy sauce & black garlic is one of the best combinations I’ve ever had for a tonkotsu bowl. Not to mention they have both thick and thin noodles 😍

  • I have really missed the cold tsukemen that they serve here at @hironoriramen. It is one of my favorite bowls of ramen you can get in OC. While I ate it pretty regularly last year, because they put ice cubes in the dipping broth it has been too cold for me during these winter months. Now that it’s warmed up and I’ve been craving some good ramen, today was the perfect day.

The broth is made from bonito with sesame seeds, scallions and chili oil. The bowl itself is quite a work of art with bean sprouts, menma, spinach, a seasoned runny egg, kaiware sprouts and pork belly chashu covering a mountain of tsukemen noodles!

The reason I love this bowl so much is because how uniquely it’s made and the vibrant dynamic flavors you get. As I mentioned the broth itself is chilled with ice cubes, every other tsukemen I’ve ever had is with a warm, rich and thick paitan. The broth basically tastes like a really amazing ponzu sauce with a thicker mouth feel, though it is still significantly thinner than your standard dipping broth. While the chili oil makes it look uber spicy, it’s actually quite crushable I’d put it at a 3/10 in terms of spiciness. The soup also does an incredible job of coating everything you dip into it.

The toppings were well done and even better when submerged in the broth. Their pork belly chashu is some of the best in the game in terms of everything from fat/meat ratio to the intense bbq flavor it has from the cooking process. The sprouts and spinach brought a nice balance to the meal so you don’t feel too unhealthy. The egg was perfectly runny. The noodles were not as al dente as I’m used to but still pretty good and they had a nice chew to them.

If you have not tried this yet you’re missing out. Such an interesting take on tsukemen that any noodle or Asian food lover would really enjoy. You get quite a big portion too, I’m rarely able to finish all the noods.

TONKOTSU Ramen Ingredients: THIN Noodles, Pork Chashu, Green Onion, Spinach, Seaweed, Bean Sprouts, HALF EGG, and ‘Wood Ear Mushroom’. 🚨TIP🚨: If you go on their website they have a WAITLIST, but if it’s during their busy hours you usually have to show up at the restaurant and put your name on the list. Busy hours = dinner time! Might I add, absolutely 100% worth the wait. If it’s over 1hr maybe consider coming back another day, but there’s also a bar/coffee and tea shop in the same plaza (to hang while you wait)😊 Hiro Nori also have VEGAN options!💚🌱
