I made my waffles with wholemeal spelt flour and an extra boost of color and nutrients from @unicornsuperfoods Matcha 💚🍵
Served with vegan cream cheese, avocado, chickpeas, cherry tomatoes, herbs, nuts and seeds and a drizzle of hot sauce 🌶️

Savory spelt matcha waffles (makes 6 small/medium waffles) 
🔸1 cup (120g) wholemeal spelt flour
🔸1/4 tsp Himalayan salt
🔸1 to 2 tsp matcha powder
🔸1 tsp baking powder 
🔸1/2 tsp baking soda
🔸1 cup (240ml) unsweetened almond milk
🔸1 tbsp lemon juice
🔸1 tbsp olive oil (sub coconut or avocado oil) + more to grease the waffle iron
Preheat the waffle iron. In a bowl mix flour, salt, matcha powder, baking powder and baking soda. Add almond milk, lemon juice and olive oil and mix only until combined. Bake waffles in a hot waffle iron, greased with a, little bit of oil, for about 4-6 minutes (exact time will depend on your waffle iron). Best served warm!

  • As I promised here’s my turkey enchilada recipe from Tuesday night 😋🤩

I made 4 but I measured everything for mine which is the first one on the left 🙈 So I’ll share the recipe for my enchilada and if you want to make more or you want to make them bigger, better etc feel free obviously 😂

In my enchilada I had: 70g lean turkey mince| 80g enchilada sauce| 1/4 red bell pepper  chopped green chilli  15g cheddar cheese  1 corn tortilla  chilli powder and salt 

.

One enchilada with these ingredients is 327 calories P30|C24|F13

I can’t believe that whilst I am not allowed to be in Crete for my mum’s annual memorial service on 12 July our PM’s father is holidaying at his villa on Pelion claiming that his travel was essential and entered the country through Bulgaria! Really, is there no limit?!

— 1 tsp lightly dried coriander (can sub dill; for fresh herbs use 2 tbsp)

Base:
— 2 cups baby spinach, chopped (can sub mixed greens, arugula, kale, lettuce)
— 1 can (~2 cups) chickpeas, drained and rinsed (can sub lentils or black beans)
— 1 cup frozen shelled edamame, thawed (can sub green peas)
— 1/4 cup cucumber, sliced (optional)
— 1/4 avocado, sliced (optional)
⠀⠀⠀
METHOD:
1️⃣ In a large mixing bowl, whisk together marinade ingredients (lemon, olive oil, mustard, honey and coriander).
2️⃣ Toss in the base ingredients (spinach, chickpeas, edamame, cucumber and avocado) until thoroughly combined.
3️⃣ Enjoy! 🥰 Store in the fridge covered for up to 4 days.

  • Looking for a tasty new weeknight favorite the whole fam will love? This 30-minute “Pizza” Pasta Bake is simple, delicious, and can easily be doubled for future meals. Now we wanna know: what is your FAVORITE pasta 🍝 shape? Weigh in👇below! .

Ingredients (makes approx. 4-5 servings, can easily double recipe if desired): •8 oz favorite dry pasta, rotini or macaroni work best •3 cups marinara sauce •2 bell peppers, or 2 cups mini peppers, sliced into thin strips •1/2 cup sliced black olives •2 cups shredded Italian cheese •1/4 tsp each, Italian seasoning, garlic and onion powders •2 ounces pepperoni slices .

Directions: cook pasta until al dente. Mix with sauce, peppers, olives, 1 1/2 cups of cheese, and 1/2 of the pepperoni slices. Note: if you like peppers with less “crunch”, quickly pan sauté for 2-3 minutes prior to adding to mix. Add pasta to a 3 qt baking dish and top with remaining cheese and pepperoni slices. Bake at 375 for 20-22 minutes, uncovered, until golden and bubbly.

  • VEGAN THAI SWEETPOTATO CURRY✨🌶🌱
Today I wanted to show you guys one of my good old classics when it’s all about making a quick and tasty dinner that’s still packed with nutrients☺️ 
I cook it at least once a week tbh 😅for me it tastes a bit like summer☀️🤤

🌶INGREDIENTS:
For 2-3 portions you need:
-Jasmine rice 
-Tofu of your Choice and 1 tbsp cornstarch
-1 tsp coconut oil
-1/2 onion
-1 small sweet potato
-1 small zuchini
-5 Champignons 
-1/2 yellow and 1/2 red pepper
-a handfull sugar peas
-some sprouts
-a handfull fresh spinach 
-1 can coconut milk light
-2 tsp veggie broth powder (1 cube)
-1 tsp tumeric
-2-3 tsp curry
-1 tblsp kaffir lime leaves
-lemongrass powder 
-chilli flakes, salt, cayenne pepper 
-a good splash sweetener or 2 tsp brown sugar 
-fresh cilantro and basil

🌶INSTRUCTIONS:
First bring to boil the rice according to instructions. While the rice simmers peel the onion and sweet potato. And cut both into small cubes.
Heat up coconut oil in a big pot with the onion and fry for a minute. Then add the sweetpotato and let fry for another 5 mins. Meanwhile cut all the veggies(except sprouts and spinach) into pieces. Add them to the sweetpotato and let everything fry for another 5 mins. Then add all the spices. Mix and add the coconut milk, veggie broth, lime leaves and sweetener. Let simmer for about 8 mins. 
During that time cut the tofu in cubes and mix it with the cornstarch and spices of your preference (cornstarch makes the tofu super crispy). Fry it in coconut oil until crispy 🤤
Then add the sprouts, spinach, fresh basil and cilantro to the curry. Simmer for a minute and serve with the rice, Tofu cubes fresh cilantro and chilli flakes. ENJOY🥰
