  • Keto brownies with sugar free vanilla ice cream 😍 

Ingredients

1/2 cup almond flour
1/4 cup cocoa powder
3/4 cup erythritol
1/2 tsp baking powder
1 tablespoon instant coffee optional
10 tablespoons butter (or 1/2 cup + 2 Tblsp)
2 oz dark chocolate
3 eggs at room temperature
½ teaspoon vanilla extract optional

Instructions

Preheat oven to 350 degrees F (175 degrees C). 

Line an 8x8 inch or 8x9 pan with parchment paper, aluminum foil or grease with butter. 

In a medium mixing bowl, whisk almond flour, cocoa powder, baking powder, erythritol, and instant coffee. 

Be sure to whisk out all the clumps from the erythritol.

In a large microwave-safe mixing bowl, Melt butter and chocolate for 30 seconds to 1 minute or until just melted. 

Whisk in the eggs and vanilla then gently whisk in the dry ingredients just until mixed through. 
Be careful not to over mix the batter or it will become cakey.

Transfer batter into a baking dish and bake for 18-20 minutes or until a toothpick inserted comes out moist. Cool for at least 30 mins to 2 hours in the fridge and slice into 16 small squares.

  • I've not posted for a few weeks... And I'll be honest that's because I've stopped thinking a bit. My focus went, and self control and I was eating cake and chicken nuggets like they were going out of fashion!

This photo might not be the most attractive, but it represents a mental gear-shift... Last night I really wanted chips. Like REALLY. I wanted those hot, fresh from the fryer, pub style triple cooked crispy chips... Hubby suggestions of a chippy tea had been accepted and we were pondering which delivery to order after the toddler went to bed 

And then I stopped and reflected on the potatoes in the fridge, and the left over chilli... And changed my mind. And this TOTALLY SYN FREE dinner was delicious. Chilli and chips! Served with some lemon apple cucumber grown from our garden and a sprinkling of HEA cheese.

Tomatoes are one of my favorite fruits disguised as vegetables 😉 They are also full of vitamins and minerals like vitamins C, K, potassium, folate, and multiple antioxidants including lycopene- a plant compound that has been linked to a myriad of health benefits. Check out some of the varieties featured below:⁠⠀

Roma - also known as plum tomato. They are great for sauces because they’re more dry.⁠⠀
⁠⠀
Vine - are firm and hearty, good for pretty much anything! The left on the wine until they are fully ripened which means they are packed full of nutrients.⁠⠀
⁠⠀
Heirloom - wide range of sizes and colors, rich in flavor and good to liven up pretty much any dish. Heirlooms provide a ton of flavor and variety if you pick out different types for your dish.⁠⠀

Grape - good for snacking, eating raw or adding to salads; come in a variety of colors.⁠⠀

  • My lunchbox guacamole is just avocado and cream cheese - that's it! It stays fresh and green and doesn't go brown! Last time I packed it in the lunchbox, Miss 6 left half because she ran out of dippers! Well she's all stocked for tomorrow - breadsticks and carrot sticks should be enough! 😊

-2 tsp cayenne pepper ⠀

Mix all spices together in one container. Store until ready to use. One mix recipe can coat 4 chicken breasts. It's best to marinate the chicken for a few hours or overnight before cooking to give it the best flavor!⠀

1️⃣ CEREAL PANCAKES! These are just small pancakes made into a cereal with berries⠀

2️⃣Rice cake partyyyyyy…Toppings include mashed avocado + olive oil+ sea salt flakes⠀
peanut butter with bananas + hemp seeds + chia seeds + honey ⠀
Peanut butter + strawberries + chia seeds⠀
PB + Jelly + Cream cheese + cucumber + “everything but the bagel” seasoning⠀

3️⃣Curried scrambled eggs, cinnamon raisin PB & jelly toast, 🍓, avocado toast drizzled with EVOO and sprinkled with pink salt flakes⠀

4️⃣COCONUT BANANA PANCAKES 🥥🍌⠀
1 banana + 1 egg + 3 tbsp of coconut flour + 1/2 tsp of baking powder + 1/2 tsp cinnamon✨⠀
mash the banana, add whisked egg, baking powder, coconut flour and cinnamon. mix well and form pancakes into 4-5 inch cakes and cook in a pan coated with coconut oil at low heat with lid for 3-4 minutes on each side. drizzle with some maple butter and enjoy!⠀

5️⃣Sunday Paleo Pancake Stacks😍👏🏻⠀
Paleo mix and added 1 egg, 1/4 c flax meal and 1 mashed banana to the batter and cooked in a pan on low heat with the lid on until ready. ⠀
we paired them with plain yogurt, creamy PB and maple syrup.⠀

6️⃣GF LEMON RICOTTA PANCAKES 🍋🍋🍋 😍🙌🏻⠀
8 oz (1 cup) ricotta cheese + 2 tsp coconut sugar + 1 tsp lemon juice + lemon zest from 1 lemon + 1/2 tsp vanilla extract + 1 egg + 4 tbsp almond flour + 2 tbsp brown rice flour…Directions: combine all ingredients.⠀
heat a skillet over medium heat and add coconut oil. form cakes into balls with lightly floured hands, and put them into the skillet, press and lower the heat. cook for about 3-4 minutes on each side uncovered. once ready, cover with the lid and let it cook for another 1-2 minutes.⠀

  • LEMON CORRIANDER RICE 

Got some leftover rice & a case of the Lazy Weekend bug ? 
Here’s a quick 10 minute Lemon Coriander Rice , This is something that you can enjoy on its own or Pairs really well with Mexican/Indian flavours 

 INGREDIENTS 
3 cups cooked brown/white rice 
2 limes (juiced)
1/4 cup peanuts 
5-6 cashews 
10 curry leaves 
2 tsp mustard seeds 
2 dried red chillies 
1 green chilly ( slit )
1+1/2 tsp salt 
3/4 tsp turmeric 
2 tbsp oil 
A handful of fresh coriander 

METHOD 
1. Heat oil in a pan and lightly roast peanuts and cashews & set aside.
2. In the same pan, heat oil and then add mustard seeds and let it splutter, then add curry leaves ,red chilly , green chilly and fry for about 2 minutes .
3. Then lower flame and add turmeric and salt 
4. Add in your cooked brown rice and stir well 
5. Turn gas off and add in juice of 2 limes, sprinkle fresh coriander & garnish with roasted peanuts and cashews.

TIPS 
*Using day old rice (from the fridge) is a better option cause it won’t turn mushy or break into pieces when you mix it in the tempering. 
*you could definitely use freshly made rice, just let it cool completely before you do 
*make sure the heat is off when you add in lime juice or the lime juice will turn bitter

  • BRUSSEL SPROUTS WITH BACON🥓

I’ve been really enjoying baking my vegetables in the oven recently. I feel like all veggies just taste better in the oven & it’s the healthier option! Would you guys agree ???

Ingredients:
Brussel sprouts about 2 cups chopped in half
3-4 slices of bacon cut into pieces 
Oil
Salt 
Pepper

Directions:
1) Preheat the oven to 425’ 
2) clean and cut Brussel sprouts, then cut in half
3) add brussel sprouts to a bowl, add oil, salt & pepper to your liking
4) line a baking sheet with parchment paper or foil paper and add the brussel sprouts
5) spread out the veggies evenly then add cut pieces of bacon. 
6) bake for 25-30 mins stirring half way

    I’ve been really enjoying baking my vegetables in the oven recently. I feel like all veggies just taste better in the oven & it’s the healthier option! Would you guys agree ???

    Ingredients:
    Brussel sprouts about 2 cups chopped in half
    3-4 slices of bacon cut into pieces
    Oil
    Salt
    Pepper
    -
    Directions:
    1) Preheat the oven to 425’
    2) clean and cut Brussel sprouts, then cut in half
    3) add brussel sprouts to a bowl, add oil, salt & pepper to your liking
    4) line a baking sheet with parchment paper or foil paper and add the brussel sprouts
    5) spread out the veggies evenly then add cut pieces of bacon.
    6) bake for 25-30 mins stirring half way
