  • When we think of chilled summer soups, Gazpacho usually comes to mind but one of my pantry-friendly favorites is Ajo Blanco. This creamy vegan Spanish soup is made of day-old bread, almonds, garlic, and olive oil. I usually save up stale baguette pieces for this! It’s refreshing, with a kick from the garlic and splash of sherry vinegar. My version is finished with aromatic basil oil and summer fruit like cherries, grapes, or raspberries. Enjoy this refreshing soup on the hottest days!
Ajo Blanco Soup
Serves 2-3
⁣
• 2 cups ice-cold water
• 1 cup blanched almonds
• 3 cloves garlic, peeled and roughly chopped
• 3 cups of day-old baguette (regular or gluten-free), torn into pieces
• 1⁄4 cup extra-virgin olive oil
• 1 1/2 tablespoons sherry vinegar, plus more to taste
• ½ teaspoon salt
• cherries, grapes, or raspberries for garnish
• basil oil, optional for garnish (recipe follows)

In a high-speed blender or food processor, add cold water, almonds, garlic, bread, olive oil, sherry vinegar, and salt. Blend on medium-high speed until smooth and creamy. The consistency should be like thick, but runny. Add water by the tablespoon as needed and season with any additional salt and sherry vinegar. Refrigerate for a few hours to let the flavors deepen. To serve, top each bowl with fruit and a drizzle of basil oil.

Basil Oil
• ½ cup extra-virgin olive oil
• 1 cup packed fresh basil leaves
• salt

Blanch the basil leaves in a pot of boiling water for 10 seconds. Remove them and transfer immediate to a bowl of ice water. Remove and squeeze out excess water. Roughly chop and add to a blender or food processer with oil and a pinch of salt, blending until incorporated and frothy. Strain basil oil through a cheesecloth, using the back of a spoon to press on the solids to extract the oil. Use immediately or store covered in the refrigerator for up to one week.

Cook’s Note: To blanch raw almonds, boil in water for 1 minute, then transfer to an ice water bath. This will loosen the skins, making them easy to peel off. #feedfeed #tastingtable #healthyish #cherrybombe #eater #food52 #f2grams #chowhound
