I made the cake with @kalejunkie ’s vanilla sheet cake recipe. 🥰 Hard to believe that it’s dairy-free, gluten-free, and sweetened with maple syrup! ⁣
⁣
The chocolate avocado icing is by @nestandglow 🙌🏼.⁣ All you have to do is throw the ingredients in the blender, it’s soo easy.

  • Jackfruit glazed with jerk seasoning and additional island spices served up with lettuce, avocado, tomatoes. The marriage between the sweet taste of the jackfruit and the spicy jerk sauce along with a hint of stir fry sauce was simply amazing, and the texture of the jackfruit was firm (not soft) Just an amazing all around simple meatless dish you can try. ingredients..
3 tbsp chia seeds
1 cup oat milk
4 tbsp passion fruit (I got mine from the Brentwood farmers market!)

I left it in the fridge overnight and then added some toasted coconut chips + another tbsp of passion fruit on top ☺️

  • can’t turn down a delicious stuffed bell pepper recipe, especially on meatless monday!! for all my non-vegan friends, this is a great way to incorporate more plants without sacrificing taste or heartiness. the filling is amazing!! recipe yields 7
cut the top off the bell peppers and take out the contents
cook one cup of quinoa then add 1/2 can beans of choice and 1 cup roasted corn. mix with the sauce.
whisk
3 tbsp peanut butter
1/2 cup vegetable stock 
1 tbsp nutritional yeast 
1/2 tsp onion powder 
1/2 tsp garlic powder
1 tsp everything but the bagel seasoning 
dash of hot sauce 
combine with the quinoa mixture, fill the bell peppers, top with vegan cheese if you would like and bake at 375 for 40 min!

• @raoshomemade tomato basilbsauce (my absolute favorite sauce + no added sugar!!)
• sauteed squash + zucchini
• broccolini tossed with olive oil + garlic powder
And call me crazy, but I LOVE adding a little @traderjoes Umami seasoning on top for that savory taste💖

I never used to like radishes... Among many other veggies. I became more open to eating them once I found out a way to incorporate them and cook them to make them tolerable 🤣 it's funny once you introduce foods in different ways how your body adapts and eventually you crave them!

I like to use a cheese grater to slice them up into small pieces and add them to all my salads with avocado, celery and carrots for some extra crunch!

A vegan caesar salad made with a healthy caesar dressing and homemade croutons, this recipe has it all. It has all the tanginess and creaminess that you would want and expect from a traditional caesar salad, but this one is completely plant based.⠀

Ingredients:⠀
⠀
romaine lettuce leaves⠀
Vegan "chicken"-style soya chunks⠀
2 slices of bread⠀
1 tsp olive oil⠀
vegan parmesan cheese⠀
pinch of salt⠀
⠀
Caesar Dressing:⠀
1 cup raw cashews⠀
1 garlic clove⠀
2 tbsp fresh lemon juice⠀
1-2 tsp dijon mustard⠀
2 tsp capers⠀
1 tsp caper brine (optional)⠀
ground black pepper⠀
(Dressing serves 2)⠀
⠀
Directions:⠀
⠀
For the caesar dressing, blend all the ingredients with 1/2 cup of water until smooth and leave to the side.⠀
⠀
As for the homemade croutons, slice your bread into cubes and lightly toss in olive oil and salt and bake until crispy and crunchy for around 10-15 min at 200C/400F, moving them around half way through. Slightly stale bread for works perfectly for this.⠀

Place the chopped lettuce leaves with the soya chunks in a bowl and mix in the caesar dressing evenly.⠀
⠀
Top with the homemade croutons and a few grated slices of vegan parmesan cheese before serving.⠀
⠀
Sprinkle with an extra serving of black pepper if desired.⠀
