Vietnamese women, for a long time, have been closely attached to the charming Ao Dai. Ao Dai is preferred by various social strata. Ao Dai has long been an honored traditional costume, a pride of Vietnamese women. It is mainly worn for special occasions such as weddings, holidays, or graduations. They all look so beautiful and so yummy as well!

1. Ingredients:
*For the fillings*:
Vegetables: green leaf lettuce, mint, Vietnamese perilla, cucumbers sliced, garlic chives.
1 pound pork (belly)
1 tsp sugar
1 pinch salt
1/2 pound shrimp
2 stalks lemongrass, crushed
Egg omelette: 7, separate (Egg yolks, lightly whisked. Egg whites, lightly wisked).
Roasted seaweed rolls 
2 tbsp vegetable oil
*Spicy peanut dipping sauce*: 4 tbsp creamy peanut butter, 2 tbsp hoisin sauce, 2 tbsp Coconut Sriracha, 2 tbsp lime juice, 3 tbsp water, 2 garlic clove.

2. Instructions:
Cook the pork: In a pot, add enough water so that the pork is submerged. Add sugar, and a pinch of salt, pepper. Boil for 30 -35 minutes, until a chopstick inserted into the meat does not run pink. Let cool, slice it into very thin slices.

Cook the shrimp: Add salt and the lemongrass to pot filled with water. Add the shrimp and return the water to a boil, then reduce heat to low and simmer until shrimp is no longer translucent, about 2 minutes. Let cool and peeled shrimp.

Cook the egg omelette: Heat the oil in a non-stick frying pan over. Pour in the egg yolks mixture and swirl the egg around the pan until the egg is almost set. Then transfer to a cutting board and trim the edges to form a rectangle. How to make egg whites is similar to yolk. Cut the shape of a girl wearing a Vietnamese long dress, flowers from this egg.
The spicy peanut dipping sauce, combine the ingredients in a bowl.
Cook the vermicelli according to directions on the package.

  • EASY CHICKEN PHO

Hello everyone we are back! Sorry for my lack of posts this weekend if you saw my stories then you’ll know what happened but basically left my phone on top of the car and we drove off 🤦🏽‍♀️ But all sorted a fixed now luckily! Also yesterday afternoon Leo was a bit sick so I wanted to make him something easy on the tummy for dinner but still packed with nutrients and liquid to get some extra fluids in him as it was so hot too. This turned out so tasty I made the same thing for Joe and I for dinner too! So Pho (I believe) is traditionally rice noodles but I did do egg noodles for Leo as we only had thin rice noddles in the house which I had for mine! For the veg you could use whatever you like really but I’ll write down what I put in! This is enough for about two baby portions just adjust measurements if you are doing for more people. 

I served this in a bowl at first but then after realised it wasn’t the best for Leo as I like him to be able to separate his food a bit and pick out his options so I actually served it in our bunny plate which was fine as it was deep enough! 
Ingredients 
2 chicken skinless and boneless thighs (or breasts)
Garlic purée 
1 carrot 
Few bits of tender stem broccoli (normal broccoli will do too!)
2 spring onions 
4 slices of fresh ginger 
600ml of low salt chicken stock 
Handful of fresh coriander 
1 nest of rice noddles (or egg noddles)

1. Slice the ginger into 4 “coins”. Thinly slice 1/2 of one spring onion and set aside for garnish. Cut the leftover sections into “pinkie finger” lengths. Thinly slice the carrots into pinkie finger lengths but thinner (I hope that makes sense 🤣) and chop your broccoli in similar lengths 
2. Now fry off the garlic, ginger and spring onion in a oil for a few minutes 
3. Add in your stock, carrots and chicken 
4. Let this boil for 15/20 mins until your chicken is cooked then remove all the chicken and shred it with two forks
5. Add in your broccoli and continue to boil for 5 mins then add in your noodles in 
6. A couple mins and they should be done ( I pulled the broccoli out to serve on the side and removed the ginger)
7. Top with chicken, corriander and spring onion to serve!

•PHO GA/CHICKEN PHO NOODLE SOUP 🍜?
Simple but delicious 😋recipe:
• 1 free range chicken ( deboned. This way you don’t over cook your chicken, but can still have the bone to simmer for a long period of time) please swipe to the left to see how it’s done:)
• 1 pk of pho hoa season come with 4 bag only half is needed. 
• 3 tablespoon salt 
• 2 oz rock sugar or 2 tablespoon sugar 
• 1 tablespoon fish sauce (3 crabs 🦀)
• 1 teaspoon msg(optional)
• ginger the size of your 2 fingers put together.( roasted on an open fire wash and clean.  Lightly smash).
• 2 good size shallots ( roasted on an open flame.  Wash)
1•In a pot put everything but the seasoning packets.  Make sure all the chicken meat and bone is fully submerged in the water 💦. 
2•Bring to a boil.  Reduce heat to medium low boil.  3•After 20 minutes remove the chicken meat only.  Set aside to complete cool before cutting. 
4•Add in your seasoning packets. 
5•Let it simmer on low for an hour then remove the packets and shallots. 
6•Add more water if you like.  If you do bring it back to a boil.  Reduce heat to low boil for more simmering. 
7•Taste and adjust.  Now you can just add more salt to your liking.  Add too much fish sauce will make it sour. 
Low heat simmering will help keep your broth clear. 
Pho ga is best after 2 hrs or more of simmer.  Doing the meat this way will make your bowl of pho look beautiful and appetizing. This is just a basic ingredients for the broth.  What else you want to add in it is up to you. 
Served with •green onion •onion cilantro •bean sprouts •basil •lime• jalapeño •hoisin sauce •sriracha chili 🌶. Enjoy 😉

  • Day #4 and still not tired of this soup!  When I was little I always choose Beef Pho over Chicken Pho.  But i’ve  learned to appreciate #PhoGa as I got older.  I’ve been making it quite often nowadays to tweak my recipe and make it better.  I just love the light delicate broth but still very flavorful!  It’s delicious and comforting to eat especially when the temperature has been dropping.  Will work on the video recipe soon!

  • Saved enough chicken carcasses to make a pot of #PhoGa 😋 After I cook my chicken to shred, I throw the bones back into the pot too and cook down the bones until they are tender.  The broth is so incredibly rich and sweet, perfect meal for a rainy day!  Link to recipe in my bio!

A long overdue visit to @phobacseattle today before work only to discover the old boat shaped original building that I have been going to for 20 plus years is shuttered and the family has moved to a huge space in the same parking lot. Don’t @ me, as I said, been a long time since I’ve been thru! Same good pho bo, which was all I remember being on the menu at the old space when I first visited in the grunge years. These guys are really masters of the beef: every cut cooked beautifully tender and flavorful. Still, there was something about sitting in the old spot which was saturated with the smell of the giant pots of beef you could see bubbling away in the tiny back kitchen...atmosphere influences your taste buds for sure. Long May you run. 🙏

  • Update: Thanks to Nelson's hardworking fire department and their dedication to dosing last night's blaze, we are incredibly fortunate to report no damage to our space. Our hearts go out to our neighbours at @BusabaThaiCafe, @DivineAlchemyTattoos, Aldo's Dry Cleaning, each of the artists renting studio space, all graduating students that are missing garments and everyone else that's been affected.⁣

We plan to be open late this afternoon, in time for dinner service this evening. We look forward to seeing you, and once again feel the need to convey how grateful we are to be able to open our doors today. Thank you, Nelson Fire & Rescue for operating as swiftly and efficiently as possible 🙏⁣

  • Anything but a one chick pony 🍲 Making a giant pot of chicken soup has become my weekly ritual. I use it as the base for congee, noodle soup, rice cakes, you name it. I feel like making chicken soup always seems intimidating - I was intimidated too! - but it’s actually pretty simple.

Here’s what I do: rinse off my chicken and place it in a large pot. Add in an onion (halved), one bunch of scallions, one garlic (halved), half a bunch of cilantro, a few slices of ginger, and half an apple. Then fill the pot with water, bring it to a boil, and allow it to simmer for 2-3 hours. Remove onions, scallions, etc. I’ll then either store it in the pot in the fridge or strain out the soup and store in mason jars in the fridge/freezer. #CoronaCooking
