  • Made this delicious lunch bowl after my swim today..and this combination will definitely be on repeat for the next weeks! 🙃

I mixed tuna with some olive oil and dill and added to a base of greens with curried cauliflower, tomatoes, onions, cucumber, chickpeas, and crushed up @marysgonecrackers original crackers (inspired by my girl @pbhungry.runner ). Then I topped everything of with mein @ithacahummus beet hummus, feta, and @cedarsfoods tatziki!🌻

Had a very busy morning today so I will be relaxing and baking banana bread this afternoon! No new update on my foot, and concerning my stomach, I will be focusing on building my gut back up after the antiobiotic with a lot of probiotic foods..so watch out for that.  Have a lovely day 🥰

Miska mocy z łososiem i warzywami

Składniki (na 1 porcję): 120g świeżego łososia 🔸pół cukinii🔸1 marchewka 🔸1 ogórek 🔸50g komosy ryżowej 🔸sos sojowy🔸imbir 🔸czosnek🔸sos chili 🔸szczypiorek🔸czerwona cebulka 🔸cytryna

Możecie oczywiście użyć innych warzyw lub dowolnej kaszy zamiast komosy ryżowej 😊

Łososia zamarynowałam w sosie sojowym, sosie chili i soku z cytryny. Odłożyłam do lodówki na godzinę. Następnie włożyłam go do piekarnika rozgrzanego do 170°C i piekłam w zamkniętym naczyniu żaroodpornym przez 20 minut. 

W tym czasie ugotowałam komosę ryżową, a marchewkę i cukinię rozdrobniłam z użyciem temperówki do warzyw.

Poddusiłam na patleni cukinię z dodatkiem ząbka czosnku.

Marchewkę przesmażyłam z dodatkiem imbiru.

Ogórka pokroiłam w słupki, dodałam do niego sos sojowy i rozdrobniony ząbek czosnku.

Wszystko ułożyłam w miseczce, polałam sosem sojowym i posypałam czerwoną cebulką i szczypiorkiem.

Było naprawdę doskonałe 💛

  • You know you live the proper adult life when you get excited about new home appliances 😂  Recently I bought a rice cooker with steaming tray and it was definitely the best purchase of the last few months - it even beats the waffle maker 🧇 The vegetable just tastes so much better, and so does the rice and quinoa (yes, you can even make it quinoa in it) 💅🏻 Plus, you don’t need to pay any attention to it and you just let it do its magic for 20 minutes which is just amazing 😅 I also read that steaming is a really great way of cooking vegetable because it locks in nutrients 🌿 Anyway, for today’s dinner I made steamed kale, green beans and broccoli alongside quinoa and fried courgette, red onion, yellow pumpkin & @lindamccartneyfoods hoisin duck 😋 I also used some @edinburghfermentarium braw slaw which is phenomenal!! ⁣

  • Improvisation du soir qui a su satisfaire nos papilles 🤗 : Bouddha bowl composé de kasha (sarrasin grillé), de jeunes pousses d'épinards à la crème d'avoine, de carottes râpées, de dès de concombres, d'avocat et d'une nectarine blanche poêlée 😋🍲🥬🥕🥑🍐🍑. 
Pour accompagner ce repas, une sauce à base de sauce tamari et de sirop d'érable dilués avec un peu d'eau (je suis trop fan de ce mélange en ce moment 🤤).

✅Recipe (patties): Roast 3 small sweet potatoes at 400F until soft. Peel and cut into small pieces when cool. ✅Cook 1/3 cup dry millet (or quinoa) as per packet directions. ✅Combine cooked millet/quinoa with sweet potatoes and 1-can chickpeas (drained and rinsed). Add 1/2 red onion (finely chopped), 1/2 cup cilantro leaves (measured then chopped), 2 tsp cumin, 1 tsp chili powder, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tbsp sriracha (or to taste), salt to taste. Mash with potato masher until well combined, leaving some of the chickpeas whole. ✅Process 1 cup old fashioned rolled oats until flakes just start to break apart, but not so much that they turn into a flour. ✅Mix processed oats into burger batter. ✅If possible, refrigerate batter at least 15 minutes (the longer the better) so it binds better. ✅Use 1/4 cup measuring cup to form equal-sized patties. ✅Either pan fry or bake. If baking, place on a parchment-lined baking sheet and bake at 400F for about 20 minutes (or until golden brown), flipping half way.

🍫🥨CANDY BAR OATS🥨🍫
- 1/3 cup oats
- 1/2 large banana, mashed
- 2 tbsp cinnamon
- 2 tsp cardamom
- 1 tsp cocoa powder
- 1 dash vanilla
- 1 dash salt
- 2/3 cup vanilla almond milk
👉🏼microwavé
👉🏼top with crushed pretzels 🥨, choc chips🍫, and peanut butterrrrr🥜

  • happy monday!! here’s a lil quick and easy lunch action for ya, just the way I like it :) even though this lunch takes less than 15 minutes to put together it’s full of healthy fats, protein, carbs & micronutrients. perfect mid day fuel ☺️

  • It's been a while since we had a chickpea curry around here 🍛 really enjoyed making this one from @DeliciouslyElla's Quick and Easy recipe book. Only wish I'd taken the advice from the book and doubled the quantities so I had some leftovers 😆⁠⠀

I have made many a spinach and chickpea curry, but this was the first time the recipe called for me to blend up half the spinach with half the coconut milk 🥥to use as the base for the sauce. Ok so maybe it wasn't the first time I've read it in a recipe, but it was the first I actually bothered to do it 🙈It caused a little more washing up but I really liked the result 🌱⁠⠀

The other thing about this recipe was that it saw me slicing up 24 cherry tomatoes 🍅 which is a pretty specific amount and took a little while to chop, but I'd actually probably add more in next time! It made a nice change from the cheap tinned chopped tomatoes I usually buy anyway 🥫 ⁠⠀

  • Well hello there August! Isn’t it crazy how fast this year is flying by? This has officially been the longest time I haven’t traveled anywhere in a loooong time… so I have to rely vicariously on food, memories and photos. The inspiration for this bowl came from a trip to Costa Rica 🇨🇷 where I pretty much ate a version of Vegetarian “Casado” every day for 3 weeks! 😁 Rice, beans, plantains and some kind of veggies and salad. Now this bowl isn’t a traditional casado but it has everything you can ask for in a nourish bowl. Greens, plenty of plant protein, healthy fats and carbs. And of course it is loaded with nutrients while still being delicious and easy to make.

Tropical Nourish Bowl with Crispy Glazed Tempeh, Plantains, Black Beans, Kale Salad, Avocado and Cilantro Lime Quinoa 

Cilantro Lime Quinoa: 
Cooked quinoa mixed with lime juice, fresh cilantro, salt
Plantains:
Very ripe plantains pan fried until slightly caramelized in a non stick pan 
(Depending on your pan use a tiny bit of avocado oil) 
Tempeh: 
Cut into slices, then pan fried in a non stick pan from both sides until golden brown, add your choice of sauce at the very end to glaze*
(Optional: soak tempeh block first in hot water for 10 minutes to remove some of its bitterness) 
Kale salad: washed and chopped kale, massaged with lemon juice, 1/4 of an avocado and sea salt 
Black beans
Avocado with lime Juice and chili flakes
Top with salsa lizano or hot sauce

  • Spicy Buddha bowl 🥗🔥⁣

Who knows Sriracha? 😍⁣
I recently bought some and now I put it on almost any meal 😂🌶🔥 also got my roomies @beatricedes and @jonasdud hooked 🤪⁣

This bowl was spicy deliciousness 👌🏻⁣
It has spicy crispy fried tofu, lettuce, red pepper, carrot, kidney beans, nachos, avocado, pumpkin and sunflower seeds and a generous drizzle of Sriracha in it 🔥🤤⁣

Of course, if you don't have Sriracha at home or can't buy it at the store, you could easily use another (spicy) sauce 😋⁣

  • Another Vegains Freestyle Bowl I enjoyed after a nice hike 🏔😋💪 Here is what I remember putting in:

👨🏻‍🍳 I cooked whole grain spaghetti

✅Stewed in a pan without oil but with water:
broccoli
onion
frozen peas
canned white beans
1-2 tbsp of peanut butter/or tahini

I also added dried herbs and spices like curry, pepper, oregano etc.

After I took the picture I also added plain tomato sauce and a lemon. Health tip: you don’t have to squeeze the lemon but you can also cut away the skin and slice the lemon into little pieces and add them to your bowl, it’s like lemon chunks which taste fresh and you get the benefit of not only the lemon juice but the whole food with the fiber etc. (squeezing is also fine, but I like those lemon chunks 😋 try it).
