Definitely a favorite in our house ! 

We enjoyed these mouth watering steaks with a simple salad for dinner because it’s 100+ degrees in our neck of the woods! & I’m not about to heat up our whole house cookin’ a big meal. 🥵

Chia pudding is such a great way to start the day! ☀️

👉🏼 I like to add avocado to the recipe because it makes it more creamy and nutritious! Avocado is high in potassium, healthy monounsaturated fatty acids, fibers, antioxidants and contains all of the essential amino acids. 
_
👉🏼 With its grounding and relaxing properties, chia seeds help to calm the mind as well as nourishing yin energy. These nutrient-rich seeds are super ernergizing, nourishing, and contribute to reduce hunger and weight loss. They contain high amounts of fibers, calcium, phosphorus, maganese and antioxidants. In addition to being a great source of protein, chia seeds are one of the best source of omega-3 fatty acids, thus improving brain function and reducing the risk of cardiovascular diseases. 

👉🏼 Ingredients for the chia pudding 
☆ 1 cup almond milk 
☆ 1/2 coconut milk 
☆ 1 avocado 
☆ 4 dates or 1 tbsp maple syrup 

👉🏼 Instructions for the chia pudding 
☆ Blend all the ingredients EXCEPT for the chia seeds 
☆ Add 1/3 chia seeds to the mixture
☆ Mix everything together with a spoon 
☆ Let it rest in the fridge for at least 15-20 minutes (or overnight) until the seeds have absorbed the liquid to their maximum capacity. 

👉🏼 Ingredients for the fruit layers 
☆ 1 1/2 cup fresh or frozen fruits 
☆ 2 tsp honey 

👉🏼 Instruction for the fruit layers 
☆ If using frozen fruits, cook over medium heat
☆ Blend the fruits with honey 

💁🏻‍♀️I recommand white chia seeds for a more appealing color.

  • Ever since I was a wee lad I’ve dreamed of exploring the Amazon Rainforest.  I’ve often pictured myself blazing a trail through the dense jungle, making friends with natives in loincloths and discovering an ancient lost city - nearly buried in vines and foliage.  Perhaps an equally worthwhile endeavor would be discovering and researching the countless therapeutic plants within its vast interior!  It’s rightly been called the “Medicine Cabinet of the World.”

Now, while a trip to the Amazon would indeed be incredible, the truth is; the useful, medicinal plant species right here in the Midwestern USA number in the hundreds, and can cover many, if not all your basic health and remedial needs (how’s that for a run-on sentence?)! In fact, many of the regions of the world have most or all of the resources one needs to properly support the body.  However, most of these plants go unnoticed and unused.  Most are considered weeds! 😮

So, let us now explore another most conspicuous and ubiquitous medicinal herb shall we?  Chicory (Cichorium intybus) is crazy useful, and once you know its features, you will see it every day all day - especially this time of the year!  Chicory is another Asteraceae, and you can no doubt recognize the ray-like petals surrounding a round, compact micro-flower center that characterizes the plants in the gargantuan Aster family.  The flower often closes in the afternoon or even before a storm.  Amazingly, there are a number of plants that predict weather, and close their flowers to protect their pollen from rain. 😮

These blue/(or very seldom white or pink) flowered plants are most often seen along roads, in abandoned lots, and in meadows.  Even if the flowers are missing or closed, you can readily recognize the stems with a little practice.  One thing I like about chicory is the long flower-show it gives us.  Some plants flower very briefly, but chicory flowers for a few months, anyways.

  • Hosta vs Plantain // Many medicinally healing plants have look a likes. Here is a side by side example::on the left is a common landscaping perennial, hosta, which young shoots are edible but not necessarily medicinal. As you learn wild wisdom, it's so important to know look a likes and be 100%positive on you plant ID.

On the right ( and in images 2&3 ) is a super common garden "weed", plantain or plantago major in Latin. 
Plantain has a very long list of usefulness as well as historical documentation that I encourage you to read up on. It's safe for all ages and for use on animals.

Our family most commonly uses this plant as a "spit poltice" used on bug bites/stings/slivers as its active compounds work to draw out & reduce inflammation. Another herbal first aid we always have on hand is an infused oil made from plantain. Simply collect enough leaves from an unsprayed area, wipe off, leave to slightly wilt, chop, then pour an oil of your choice over them, label & cover. Allow this infusion to sit in a cupboard for about 6 weeks, periodically I check the lid to make sure no condensed water has accumulated. Often infused oils are made with dry plant material but I've learned that plantain in an acception, that's why I check it as oil and water can spoil. Once done, simply strain and keep on hand for its healing benefits. Melting in a little bees wax will firm it up to a salve if you'd want to take it a step further.

To eat fresh, snip young tender leaves into other greens for a salad or use as a smoothie component... the seeds are also a wonderful digestive support to get things moving 😆

  • Sea buckthorn can be found in unexpected places, far, far from any sea. They do love sandy soil and once they get growing, there's no stopping them. They wear their thorns with pride; big, long spears that catch and tear at skin and coats, god forbid one pokes in your eye (but hawthorn would be worse). The leaves drop off in the cold weather and the branches seem on fire with these day-glow orange-yellow berries, so tart and tangy on the tongue. The challange, after the thorns, is this: how to get the berries off the branches? They burst open at the slightest touch, squirting acidic juice in every direction, plus, longer-than-my-fingers thorns make them really hard to reach. There is an easier way: wait for sub-zero temperatures, and with secateurs and thick gloves, trim off a few side branches from each  bush (usually where there is one sea buckthorn there are plenty others). The trimming will encourage new growth if it's done correctly. Now the berries can be removed for freezing, dehydrating or preserving. 
Sea buckthorn is one of those power foods touted in health food stores and for good reason - its packed with antioxidants and dense with nutrients. Keep your eyes open - with the berries out now it's easy to find. I spotted this batch in wasteland while driving past. •

  • I'm wondering if pan-roasting the alder catkins might reduce the bitterness a little, just like it does with quinoa... UPDATE: The roasting worked better than expected! I can actually eat these out-of-hand now. They are crisp and crunchy. I cooked them until steam came out and their essential oils rose to the surface. Next time, I will even try seasoning them as I would pumpkin seeds. I'm thrilled!!
