Review:
GUYS - meet my dad’s favorite restaurant in Miami. We were looking up Chinese restaurants nearby and came across this Cantonese gem and I was nott disappointed. Located in @atlantisthepalm, the vibes were GREAT, the appetizers were beyond perfect, and the entree’s were quite good as well. It’s quite dark in the restaurant so I borrowed these photos from @eatnlondon instead hehe.

屈大均《廣東新語》「天下所有食貨,粵東幾盡有之;粵東所有之食貨,天下未必盡也」,粵菜向來有「食在廣州」之美譽。但是,嶺南本是蠻夷之地,而且氣候炎熱濕潤,野生食材眾多,以使古代的嶺南人好食野味,韓愈的《初南食貽元十八協律》當中提及了唐代嶺南的常見食材如鱟、蠔、蒲魚、蛤等。至於烹調方面,也是採以簡單處理,以嚐其真味,所以韓愈也說「腥臊始發越,咀吞面汗騂」。

今天我們所能吃到的粵菜,實始於清代「走廣」運動。當時因為海禁、一口通商的關係,全國不少商賈便來到粵地經商,而隨著他們而來的是其家鄉的烹調之法。粵菜由此揉合大江南北的烹飪結精,初時以江淮菜的烹飪法為主,後來又參考北方菜及川菜的爆、扒、烤、汆等手法,結合本土的食材及處理手法(如潮州菜及客家菜)。後來又結合了西餐的風格,終成四大中國菜系之一。

粵菜選料花樣繁多,所以北方地區也有俗語「四條腿的板凳不吃,兩條腿的廚子不吃」來形容廣東人所食之廣。基本上天上飛的、地上爬的、水中游的幾乎都能上席。粵菜的特色在於著重食物原本的鮮味,因此一般做得比較為清淡,力求清中求鮮、淡中求美。所以喜歡以清蒸、煮的方式烹調,並鮮有帶濃烈的味道。同時,粵菜在烹調上又好以炒、爆,兼有燴、煎、烤,講究鮮、嫩、爽、滑,曾有「五滋六味」之說。「五滋」即香、松、臭、肥、濃,「六味」 是酸、甜、苦、辣、鹹、鮮。同時注意色、香、味、形。

I fry my dumplings in Canadian canola oil; grown by canola farmers across Canada 🇨🇦. I use canola for most of my Asian home cooking because of its high heat tolerance. I also like its neutral flavour, high in monounsaturated fat & omega 3 alpha-linolenic acid (ALA) profile.

Beef with flat rice noodle, onions and spring onions fried with a soy sauce mix.  This has got to be one of my fave Cantonese dishes. It's a must order when we go yum cha (dim sum) or in a cafe in HK. It's so simple yet it packs so much taste and doesn't skimp on the flavour 👏🏼. ⁣

I use the following recipe;⁣
⁣
1️⃣ On a high heat, add a bit of oil to a non-stick frying pan or wok.⁣
2️⃣ Once the pan is hot, add in the beef and cook it for about 2mins. Once it is cooked remove the beef and set aside for later.⁣
3️⃣ Make a sauce mix with 5 tsp soy sauce, 2 tsp dark soy sauce and 1 tsp sugar.⁣
4️⃣ Clean out the pan/wok and add in a bit of oil. Once the oil is hot add in the white onion and cook for about 1 minute.⁣
5️⃣ Then add in the noodles and the sauce mix at the same time and stir the noodles with the sauce. Use the sauce to soften up the noodles more, and keep moving the noodles around so it doesn't sit too long against the pan (else it might stick to it). Cook it for about 1-2 minutes or until it looks soft.⁣
6️⃣ Throw in the green onions and the cooked beef and quickly toss it into the noodles and turn off the heat.⁣
7️⃣ Continue to mix altogether and let the green onions cook with the residual heat from the pan.⁣

𝐇𝐚𝐯𝐞 𝐲𝐨𝐮 𝐭𝐫𝐢𝐞𝐝 𝐭𝐡𝐢𝐬 𝐝𝐢𝐬𝐡 𝐛𝐞𝐟𝐨𝐫𝐞? 𝐈𝐬𝐧'𝐭 𝐢𝐭 𝐭𝐡𝐞 𝐛𝐞𝐬𝐭? 𝐈𝐟 𝐧𝐨𝐭 𝐰𝐡𝐚𝐭'𝐬 𝐲𝐨𝐮𝐫 𝐠𝐨 𝐭𝐨 𝐧𝐨𝐨𝐝𝐥𝐞 𝐝𝐢𝐬𝐡? ⁣😍
  • 𝐁𝐞𝐞𝐟 𝐇𝐨𝐫 𝐅𝐮𝐧⁣ 🍜
    ⁣
    Beef with flat rice noodle, onions and spring onions fried with a soy sauce mix. This has got to be one of my fave Cantonese dishes. It's a must order when we go yum cha (dim sum) or in a cafe in HK. It's so simple yet it packs so much taste and doesn't skimp on the flavour 👏🏼. ⁣
    ⁣
    I use the following recipe;⁣
    ⁣
    1️⃣ On a high heat, add a bit of oil to a non-stick frying pan or wok.⁣
    2️⃣ Once the pan is hot, add in the beef and cook it for about 2mins. Once it is cooked remove the beef and set aside for later.⁣
    3️⃣ Make a sauce mix with 5 tsp soy sauce, 2 tsp dark soy sauce and 1 tsp sugar.⁣
    4️⃣ Clean out the pan/wok and add in a bit of oil. Once the oil is hot add in the white onion and cook for about 1 minute.⁣
    5️⃣ Then add in the noodles and the sauce mix at the same time and stir the noodles with the sauce. Use the sauce to soften up the noodles more, and keep moving the noodles around so it doesn't sit too long against the pan (else it might stick to it). Cook it for about 1-2 minutes or until it looks soft.⁣
    6️⃣ Throw in the green onions and the cooked beef and quickly toss it into the noodles and turn off the heat.⁣
    7️⃣ Continue to mix altogether and let the green onions cook with the residual heat from the pan.⁣

  • My love of char siu is from one of the most classic Hong Kong movies - God of Cookery (食神) that I watched all the time when I was little. I love to order char siu whenever I visit a Cantonese restaurant. Once you make it, you can eat it with rice or noodles, or make a bao with it too! Char siu may look like it takes lots of work to make, but it’s actually quite simple as you only need to remember to marinate it the day before you’re cooking it!
