✔️𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤 ✔️
2 tbsp mustard oil 
Pinch of  hing / asafoetida
1 tsp cumin / jeera
1 Onion finely chopped  1 tsp ginger garlic  paste
2green chillie chopped 
1/2 tsp turmeric powder
1/2 tsp kashmiri red chilli powder
1 tsp coriander powder
1/2 tsp garam masala 
3 tomato finely chopped
1½ cup water
4 potato / aloo, boiled
Sal as per taste  coriander, finely chopped

✅METHOD ✔️
1⃣ In a  kadai heat oil and add pinch of hing, cumin .
2⃣now add onion and saute well. saute until onions turn golden brown.
3⃣ now add ginger garlic paste and saute well.
4⃣keeping the flame on low add turmeric powder,chilli powder, coriander powder, tsp garam masala and  salt.
5⃣saute on low flame until spices turn aromatic.
6⃣add  tomato and saute well until tomatoes turn soft.
7⃣further mash 2 boiled potato slightly.
8⃣mix well making sure all the spices are well combined.
9⃣now add  water  and add salt as per taste and stir well .
🔟cover and simmer for 10 minutes making sure flavours are absorbed well.finally, add chopped coriander and enjoy aloo tamatar ki sabji with phulka/roti  or poori.
