Recipe: Pasta⠀
8 ounces cooked pasta of choice⠀
1 clove garlic, thinly sliced⠀
3/4 cup grape tomatoes, washed⠀
2 tablespoons olive oil⠀
Salt⠀
Pepper⠀
1/2 cup of dairy free feta, rolled into balls⠀
Fresh basil, chopped⠀
⠀
Sauce⠀
1 cup tomato Sauce⠀
3 tablespoons almond milk yogurt⠀
1 tablespoon hot sauce (or more)⠀
1 teaspoon garlic powder⠀
1/2 teaspoon salt⠀
⠀
Instructions⠀
1. Preheat oven to 400.⠀
2. Toss tomatoes with one tablespoon olive oil and place in a small cast iron, oven safe pan or baking sheet. Bake for about 20 minutes until tomatoes are blistered.⠀
3. Meanwhile, add the other tablespoon olive oil in a sauté pan over medium high heat.⠀
4. Add garlic and sauté for about two minutes, until fragrant.⠀
5. Add kale and toss with the olive oil and salt and pepper to taste.⠀
6. Cover and sauté for about 5 minutes. Remove from heat.⠀
7. Add sauce, yogurt, hot sauce, garlic powder and salt to a small sauce pan and whisk together to combine.⠀
8. Heat the the mixture over medium heat until warm.⠀
9. Pour over pasta!⠀
10. Toss with kale mixture, roasted tomatoes, sauce, and top with fresh basil and dairy free feta balls. Enjoy!⠀

  • Do you ever feel like there’s so much nutrition information out there, you just don’t know what’s right, wrong, or who to trust? 🤷‍♀️ Believe me, I get it. Before becoming a Dietitian, I spent so much time trying to figure out what the ‘right’ way to eat was (spoiler, this is different for everyone). The way that would make me feel my best, nourish my body, and help me thrive. Even when I decided I wanted to go plant-based, there were still questions- like what nutrients did I actually need to focus on? How would I get my protein? What would meal prepping look like for me now, and how would I make my food taste good?

It took me a long time to figure it out. I felt confused by so much information, misguided by people who weren’t health care professionals, and out of my comfort zone. I didn’t know if I was getting the nutrients I needed to support my body and my health.

Fast forward a few years, and I finally figured it out ✨ I spent a LOT of time reading research, using trial and error, and simplifying the way I was eating- because plant-based eating doesn’t need to be complicated. Now I feel healthy, strong, and confident in the choices that I’m making, and better yet, as a Registered Dietitian, I help other people feel the same way ✨.

Hoy #Patateanda viene con esta pinta...Son fáciles y están brutales❗❗❗No podéis resistir a probarlas❗Os dejo los ingredientes y espero vuestros comentarios😜  
  
✨Ingredientes  
- 500gr de patatas  
- orégano  
- Parmesano  
- Aceite y sal  
✨Tan sencillo como chascar las patatas con piel y bien lavadas. Colocarlas sobre una bandeja con papel y añadir un par de cucharadas de aceite y un poco de sal. Remover bien y añadir orégano por encima. Hornea a 220ºC calor arriba y abajo con ventilador unos 20 minutos.  
✨Saca del horno, ralla un poco de parmesano sobre ellas al gusto y vuelve a hornear hasta que estén hechas y el queso dorado.  
  
Crujientes por fuera, cremosas por dentro y con un saborazo total!🙏 QUÉ OS PARECEN ❓❓❓
